  • 12 oz about 3 cups okra (bhindi), trimmed and sliced
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ¼ tsp turmeric
  • ½ tsp chili powder or paprika optional
  • Salt to taste
  • Black pepper to taste
  • 3-4 eggs
  • Fresh cilantro chopped (optional)

Cooking Instructions
 

  1. Heat oil in a wide skillet over medium heat.
  2. Add okra and cook for 8-10 minutes, stirring occasionally, until tender and lightly crisp.
  3. Add onion and cook for 3-4 minutes until soft.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Stir in cumin, coriander, turmeric, chili powder (if using), salt, and pepper.
  6. Make small wells in the mixture and crack eggs directly into the pan.
  7. Cover and cook for 4-6 minutes, until eggs are set to your liking.
  8. Garnish with cilantro and serve warm.
