Cooking Instructions
 

  1. Bring water or vegetable broth to a boil in a saucepan.
  2. Add quinoa, reduce heat, cover, and simmer for 12-15 minutes until liquid is absorbed.
  3. Remove from heat and fluff quinoa with a fork. Let cool slightly.
  4. While quinoa cooks, blanch asparagus in boiling water for 2-3 minutes until tender-crisp. Drain and cool.
  5. In a large bowl, combine quinoa, asparagus, tomatoes, and peas.
  6. Drizzle with olive oil and lemon juice.
  7. Season with salt and black pepper.
  8. Toss gently and serve warm or chilled.
