  • 1 lb fresh green beans trimmed and cut in half
  • 1 tbsp olive oil or butter
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup mushrooms sliced (optional but recommended)
  • ¾ cup milk or plant-based milk
  • ½ cup vegetable broth
  • 2 tbsp all-purpose flour
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp nutmeg optional
  • ½ cup crispy fried onions store-bought or homemade

Cooking Instructions
 

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Bring a pot of salted water to a boil. Blanch green beans for 4–5 minutes until just tender. Drain and set aside.
  3. Heat olive oil or butter in a skillet over medium heat. Sauté onion for 3–4 minutes until soft.
  4. Add garlic and mushrooms. Cook until mushrooms release moisture and soften, about 5 minutes.
  5. Sprinkle flour over the vegetables and stir well. Cook for 1 minute.
  6. Slowly whisk in milk and vegetable broth. Simmer until thickened, 3–5 minutes.
  7. Season with salt, pepper, and nutmeg if using.
  8. Add green beans to the sauce and toss gently. Transfer to baking dish.
  9. Bake uncovered for 20 minutes.
  10. Sprinkle crispy onions on top and bake another 10 minutes until golden.
