Cooking Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Combine the flour, baking powder, sugar, and salt in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually stir in the buttermilk until a soft dough forms.
  4. Gently pat the dough to about 1-inch thickness and cut into biscuits. Arrange them on the prepared baking sheet.
  5. Bake for 12-15 minutes until risen and golden brown.
  6. Meanwhile, melt 2 tablespoons butter in a large skillet over medium heat. Add the mushrooms and cook for 5-6 minutes until tender and lightly browned.
  7. Sprinkle the flour over the mushrooms and stir continuously for about 1 minute.
  8. Gradually whisk in the milk. Add the garlic powder, onion powder, sage, thyme, black pepper, and salt.
  9. Simmer for 5-7 minutes, stirring frequently, until the gravy is thick and creamy.
  10. Split the warm biscuits, spoon the mushroom gravy generously over the top, garnish with fresh parsley, and serve immediately.

Notes

Keep the butter and buttermilk cold for light, flaky biscuits.
Finely chopped mushrooms give the gravy a hearty texture similar to traditional country gravy.
Add extra milk if the gravy becomes too thick.
For a meatless sausage-style version, add crumbled vegetarian breakfast sausage to the gravy.
