Cooking Instructions
 

  1. Heat the olive oil in a saucepan over medium heat.
  2. Add the carrots and onion and cook for 3-4 minutes until slightly tender.
  3. Stir in the jalapeños and garlic and cook for 1 minute.
  4. Add the vinegar, water, salt, sugar, peppercorns, oregano, and bay leaves.
  5. Bring the mixture to a gentle boil.
  6. Reduce the heat and simmer for 5 minutes.
  7. Carefully transfer the vegetables and hot brine into a clean glass mason jar.
  8. Make sure the vegetables are completely covered by the brine.
  9. Allow the jar to cool to room temperature before sealing.
  10. Refrigerate for at least 24 hours before serving.
