Cooking Instructions
 

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and a pinch of salt.
  3. Cook 5–6 minutes, until soft.
  4. Add carrots and cook 3–4 minutes more.
  5. Stir in garlic and cook 30 seconds.
  6. Add mung beans, bay leaf, and broth or water.
  7. Bring to a boil, then reduce heat.
  8. Cover and simmer 40–45 minutes, until beans are very tender.
  9. Adjust Texture
  10. Mash lightly with a spoon or blend partially if you prefer a creamier soup.
  11. Remove bay leaf.
  12. Season with salt and pepper.
