Ingredients
  

  • 4 medium potatoes peeled and cubed
  • 2 carrots diced
  • 1 cup green peas
  • 1/2 red onion finely diced
  • 1/3 cup mayonnaise or Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh parsley chopped

Cooking Instructions
 

  1. Bring a large pot of salted water to a boil.
  2. Add the potatoes and carrots and cook for 10-12 minutes until tender.
  3. Add the peas during the last 2 minutes of cooking.
  4. Drain the vegetables and allow them to cool completely.
  5. Transfer the potatoes, carrots, and peas to a large mixing bowl.
  6. Add the diced red onion.
  7. In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, olive oil, salt, and black pepper.
  8. Pour the dressing over the vegetables and toss gently until evenly coated.
  9. Sprinkle with fresh parsley and chill for at least 30 minutes before serving.
  10. Serve cold.
