Cooking Instructions
 

  1. Place the diced pumpkin in a large saucepan.
  2. Add sugar, orange juice, lemon juice, cinnamon, ginger, nutmeg, cloves, and salt.
  3. Stir well to combine.
  4. Bring the mixture to a gentle boil over medium heat.
  5. Reduce the heat to low and simmer for 35-45 minutes, stirring occasionally.
  6. Cook until the pumpkin is very soft and the mixture thickens.
  7. Mash with a potato masher or blend until smooth if desired.
  8. Stir in the vanilla extract.
  9. Allow the jam to cool slightly.
  10. Spoon into clean glass jars, seal, and refrigerate after cooling completely.
