  • 1 small onion finely diced
  • 2 tablespoons olive oil
  • 2 eggs lightly beaten
  • ¾ cup feta cheese crumbled (or plant-based feta)
  • 2 tablespoons fresh dill or parsley chopped
  • Salt and black pepper to taste
  • 1 package phyllo dough thawed
  • ½ cup olive oil or melted butter

Cooking Instructions
 

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and cook 5-6 minutes, until soft.
  3. Add spinach and cook until wilted (or warmed through if frozen).
  4. Remove from heat and let cool slightly.
  5. Stir in eggs, feta, herbs, salt, and pepper.
  6. Preheat oven to 375°F (190°C).
  7. Brush a baking dish with olive oil.
  8. Layer 6-8 sheets of phyllo, brushing lightly with oil between each.
  9. Spread spinach mixture evenly over the phyllo.
  10. Top with remaining phyllo sheets, brushing each with oil.
  11. Score the top layers into squares or triangles.
  12. Bake 40-45 minutes, until golden and crisp.
  13. Let rest 10 minutes before cutting and serving.
