Ingredients
  

  • 2 tablespoons olive oil or butter
  • 1 onion diced
  • 2 garlic cloves minced
  • 3 –4 cups broccoli florets stems peeled and chopped work too
  • 1 medium potato peeled and diced
  • 5 cups vegetable broth or water
  • Salt and black pepper to taste
  • ½ cup milk plant milk, or cream (optional)
  • Croutons Optional
  • Grated cheese or nutritional yeast Optional
  • Olive oil drizzle Optional

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion with a pinch of salt and cook 5–6 minutes, until soft.
  3. Add garlic and cook 30 seconds.
  4. Add broccoli and potato.
  5. Stir to coat with oil and flavor.
  6. Simmer
  7. Add broth, salt, and pepper.
  8. Bring to a boil, then reduce heat and simmer 20 minutes, until vegetables are very tender.
  9. Blend soup until smooth using an immersion blender or countertop blender.
  10. Stir in milk or plant milk if using.
  11. Taste and adjust seasoning.
  12. Serve warm with toppings if desired.
