- Heat olive oil in a large pot over medium heat.
- Add onion with a pinch of salt and cook 5–6 minutes, until soft.
- Add garlic and cook 30 seconds.
- Add broccoli and potato.
- Stir to coat with oil and flavor.
- Simmer
- Add broth, salt, and pepper.
- Bring to a boil, then reduce heat and simmer 20 minutes, until vegetables are very tender.
- Blend soup until smooth using an immersion blender or countertop blender.
- Stir in milk or plant milk if using.
- Taste and adjust seasoning.
- Serve warm with toppings if desired.
