Baked potato is a simple, comforting dish made by oven-roasting whole potatoes until crisp outside and fluffy inside for easy home cooking.

Ingredients
  

  • 4 medium russet potatoes
  • Olive oil
  • Salt
  • Optional Toppings
  • Butter or olive oil
  • Sour cream or plant-based alternative
  • Chopped chives or green onions
  • Roasted vegetables
  • Cheese or plant-based cheese

Method
 

  1. Preheat the Oven
  2. Preheat oven to 425°F (220°C).
  3. Prepare the Potatoes
  4. Scrub potatoes clean and pat dry.
  5. Pierce each potato 3-4 times with a fork.
  6. Rub lightly with olive oil and sprinkle with salt.
  7. Place potatoes directly on the oven rack or on a baking sheet.
  8. Bake 50-60 minutes, until skin is crisp and a knife slides easily into the center.
  9. Scoop out the inside and add top with Butter.

Notes

Extra crispy skin: bake directly on the rack
Softer skin: wrap loosely in foil
Meal idea: top with beans, sautéed greens, or leftover veggies
Grow-it-yourself: potatoes are easy to grow in containers
