- Preheat the Oven
- Preheat oven to 425°F (220°C).
- Prepare the Potatoes
- Scrub potatoes clean and pat dry.
- Pierce each potato 3-4 times with a fork.
- Rub lightly with olive oil and sprinkle with salt.
- Place potatoes directly on the oven rack or on a baking sheet.
- Bake 50-60 minutes, until skin is crisp and a knife slides easily into the center.
- Scoop out the inside and add top with Butter.
Notes
Extra crispy skin: bake directly on the rack
Softer skin: wrap loosely in foil
Meal idea: top with beans, sautéed greens, or leftover veggies
