- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Add squash and cook for 5-7 minutes until slightly tender.
- Stir in garlic, flour, paprika, salt, and pepper.
- Pour in milk and cook, stirring, until lightly thickened.
- Transfer mixture to a greased baking dish and sprinkle breadcrumbs on top.
- Bake for 30-35 minutes until set and lightly golden.
- Let rest briefly before serving.
