- Heat olive oil in a large pot over medium heat.
- Add onion and carrots with a pinch of salt.
- Cook 6-8 minutes, until softened.
- Add Garlic & Beans
- Stir in garlic and cook 30 seconds.
- Add white beans and stir to combine.
- Simmer
- Add broth, thyme (or bay leaf), salt, and pepper.
- Bring to a boil, then reduce to a gentle simmer.
- Cook 20-25 minutes.
- Adjust Texture
- For a creamier soup, mash some beans against the side of the pot or blend a portion.
- Finish & Serve
- Remove from heat.
- Stir in fresh parsley and a squeeze of lemon if desired.
- Serve warm.
