- Preheat oven to 375°F (190°C).
- Place crust in a pie dish if using.
- Heat a little olive oil in a pan.
- Sauté vegetables 5-7 minutes until softened.
- Spread evenly in the crust (or greased dish for crustless).
- Whisk eggs, milk, salt, and pepper.
- Pour over vegetables.
- Sprinkle cheese on top if using.
- Bake
- Bake 40-45 minutes, until set in the center and lightly golden.
- Cool & Serve
- Let rest 10 minutes before slicing.
