- Heat olive oil in a skillet over medium heat.
- Add vegetables and sauté for 5-7 minutes until tender. Season with salt and pepper.
- Remove vegetables from the pan.
- Place one tortilla in the skillet. Sprinkle half with cheese, add vegetables, then top with more cheese.
- Fold tortilla over and cook for 2-3 minutes per side, until golden and cheese is melted.
- Repeat with remaining tortillas.
- Slice and serve warm.
