- Heat olive oil in a pan over medium heat.
- Add vegetables and a pinch of salt.
- Cook 5-7 minutes, until soft and lightly golden.
- Add garlic and cook 30 seconds.
- In a bowl, mash lentils slightly.
- Add cooked vegetables, spices, salt, and pepper.
- Stir in breadcrumbs or oat flour until mixture holds together.
- Shape into 4 cutlets.
- Cook in a lightly oiled pan over medium heat 4-5 minutes per side, until golden.
- Place arugula on plates.
- Top with warm veggie cutlets.
- Finish with lemon juice, olive oil, or sauce if desired.
