- Bring a pot of salted water to a boil. Add rice and cook until 70-75% done. Drain and set aside.
- Heat oil or ghee in a large pot. Add onions and cook until golden.
- Add garlic and ginger; sauté 30 seconds.
- Add vegetables and cook for 5 minutes.
- Stir in cumin, coriander, turmeric, garam masala, and salt.
- Add yogurt and mix gently.
- Layer partially cooked rice over vegetables.
- Drizzle saffron water on top if using and sprinkle with herbs.
- Cover tightly and cook on low heat for 20-25 minutes.
- Fluff gently before serving.
