Cooking Instructions
- Heat olive oil in a pot over medium heat.
- Add onion with a pinch of salt and cook 5–6 minutes, until soft.
- Add garlic and cook 30 seconds.
- Add Tomatoes & Simmer
- Stir in tomatoes and broth.
- Bring to a boil, then reduce heat and simmer 15–20 minutes.
- Blend until smooth using an immersion blender or countertop blender.
- Stir in milk or plant milk if using.
- Taste and adjust seasoning.
- Serve warm with herbs or olive oil on top.
