- Bring a pot of salted water to a boil. Add potatoes and cook for 12-15 minutes until tender. Drain and slice.
- In the same pot, blanch green beans for 2-3 minutes until crisp-tender. Drain and cool.
- Cook eggs in boiling water for 8-9 minutes for jammy yolks. Cool, peel, and halve.
- In a small bowl, whisk olive oil, vinegar or lemon juice, Dijon, salt, and pepper.
- Arrange greens on a large platter or in bowls.
- Top with potatoes, green beans, tomatoes, olives, eggs, and red onion.
- Drizzle dressing over the salad just before serving.
