- Prepare the Kofta
- In a bowl, combine mashed potatoes, paneer, cornflour, cilantro, salt, and pepper.
- Shape mixture into small balls or oval dumplings.
- Heat oil in a skillet over medium heat.
- Shallow-fry kofta until golden on all sides. Remove and set aside.
- Prepare the Sauce
- Heat butter or oil in a pan over medium heat.
- Add onion and cook for 5-6 minutes until soft and lightly golden.
- Add garlic and ginger; cook for 30 seconds until fragrant.
- Stir in tomato purée and tomato paste. Cook for 8-10 minutes until thick and glossy.
- Add chili powder, garam masala, cumin, coriander, and salt. Stir well.
- Lower heat and stir in cream. Add water if needed to loosen sauce.
- Assemble
- Gently add kofta to the sauce just before serving.
- Simmer for 3-4 minutes. Serve warm.
