- Preheat the oven to 400°F (200°C).
- Cut the pears in half lengthwise and carefully remove the cores with a spoon or melon baller.
- Arrange the pear halves cut-side up in a baking dish.
- Brush lightly with olive oil or melted butter and drizzle with lemon juice.
- Sprinkle with a small pinch of salt, black pepper, and half of the fresh thyme.
- Roast for 15-20 minutes until the pears begin to soften but still hold their shape.
- Remove from the oven and fill the center of each pear with crumbled blue cheese and chopped walnuts.
- Return to the oven for another 5 minutes, until the cheese softens and the walnuts are lightly toasted.
- Transfer the roasted pears to a serving platter and drizzle with honey.
- Garnish with the remaining fresh thyme and serve warm.

Choose pears that are ripe but still firm so they maintain their shape while roasting.
Bosc and Anjou pears work especially well for baking.
