- If using wooden skewers, soak in water for 20 minutes.
- Preheat grill or grill pan to medium-high heat.
- In a bowl, toss mushrooms, zucchini, and cherry tomatoes with olive oil, balsamic vinegar, garlic, salt, and pepper.
- Thread vegetables onto skewers, alternating pieces.
- Grill for 12-15 minutes, turning occasionally, until vegetables are tender and lightly charred.
- Remove from grill and serve warm.
