- Add chickpeas, herbs, onion, garlic, olive oil, lemon juice, spices, salt, and pepper to a food processor.
- Pulse until coarse but well combined not smooth.
- Transfer mixture to a bowl.
- Stir in flour as needed until mixture holds together.
- Shape into 4 burger-sized patties.
- Pan-fry: Heat oil in a skillet over medium heat.
- Cook patties 4–5 minutes per side, until golden and crisp.
- Bake: Bake at 400°F (205°C) for 20–25 minutes, flipping once.
- Serve on buns or pita with lettuce, tomato, and tahini or yogurt sauce.
