- Wash the bok choy thoroughly, making sure to remove any dirt between the stalks.
- Cut larger bok choy in half lengthwise and leave smaller pieces whole.
- Place the bok choy in a steamer basket over simmering water.
- Cover and steam for 4-6 minutes until the leaves are tender and the stalks remain slightly crisp.
- Meanwhile, heat the sesame oil in a small skillet over medium-low heat.
- Add the garlic and cook for about 30 seconds until fragrant, being careful not to brown it.
- Stir in the soy sauce, rice vinegar, honey or maple syrup if using, and red pepper flakes. Remove from the heat.
- Arrange the steamed bok choy on a serving platter.
- Spoon the warm garlic-sesame sauce evenly over the bok choy.
- Sprinkle with sesame seeds, scallions if using, and black pepper, then serve immediately.
