- Add lentils and water to a pot. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes until lentils are soft.
- Heat oil or ghee in a small skillet over medium heat.
- Add onion and sauté for 4–5 minutes until golden.
- Add garlic and ginger; cook for 30 seconds until fragrant.
- Stir in cumin, turmeric, coriander, and chili powder. Cook briefly.
- Add spice mixture to cooked lentils and stir well.
- Season with salt and simmer for another 5 minutes.
- Garnish with cilantro if using and serve warm.
