- Place potatoes in a pot and cover with salted water.
- Bring to a boil and cook 15–20 minutes, until fork-tender.
- Drain and let steam dry for a few minutes.
- Preheat oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
- Place potatoes on the baking sheet.
- Use the bottom of a glass or spatula to gently smash each potato.
- Drizzle with olive oil and season with salt and pepper.
- Add optional herbs or garlic if using.
- Roast 30-35 minutes, flipping once, until deeply golden and crispy.
- Finish with optional toppings and serve hot.
