- Cook pasta according to package instructions until al dente. Reserve ½ cup pasta water, then drain.
- Heat olive oil or butter in a large skillet over medium heat.
- Add onion and cook for 3-4 minutes until soft.
- Add garlic and cook for 30 seconds.
- Add mushrooms and cook for 6-8 minutes until browned and tender.
- Stir in milk and vegetable broth. Simmer gently for 4-5 minutes until slightly thickened.
- Season with salt, pepper, and thyme.
- Add cooked pasta to the skillet, tossing to coat. Use reserved pasta water as needed to loosen the sauce.
- Stir in Parmesan if using. Remove from heat.
- Garnish with parsley and serve warm.
