- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large bowl, combine the sliced peaches, sugar, lemon juice, vanilla, cinnamon, and cornstarch.
- Spread the peach mixture evenly in the prepared baking dish.
- In another bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- Add the milk, melted butter, and vanilla and stir just until a smooth batter forms.
- Spoon the batter evenly over the peaches, leaving a few small openings for the fruit to bubble through.
- Place the baking dish in the oven and bake for 35-40 minutes.
- Continue baking until the topping is golden brown and the peach filling is bubbling around the edges.
- Remove from the oven and allow the cobbler to rest for 10-15 minutes so the filling can thicken slightly.
- Serve warm on its own or with vanilla ice cream or whipped cream.
