- In a large bowl, whisk together the flour, eggs, milk, melted butter, sugar, vanilla, cinnamon, and salt until smooth.
- Let the batter rest for 5-10 minutes.
- Heat a lightly buttered nonstick skillet over medium heat.
- Pour about 1/4 cup of batter into the skillet and immediately swirl the pan to create a thin, even layer.
- Cook for 1-2 minutes until the edges begin to lift and the bottom is lightly golden.
- Flip the crepe and cook for another 30-60 seconds.
- Repeat with the remaining batter.
- Combine the sugar and cinnamon in a small bowl.
- Brush each warm crepe lightly with melted butter and sprinkle with cinnamon sugar. Fold or roll the crepes.
- Serve warm with powdered sugar, fresh fruit, maple syrup, or honey if desired.
