- Heat olive oil or butter in a pot over medium heat.
- Add onion and cook for 4-5 minutes until soft.
- Add garlic and ginger; cook for 30 seconds until fragrant.
- Add carrots and stir to coat.
- Pour in vegetable broth and bring to a gentle boil.
- Reduce heat, cover, and simmer for 25-30 minutes, until carrots are very tender.
- Blend until smooth using an immersion blender or blender.
- Stir in coconut milk if using.
- Season with salt and black pepper.
- Warm gently and serve.
