- Heat olive oil or butter in a large pot over medium heat.
- Add onion and cook for 4-5 minutes until soft.
- Add garlic and cook for 30 seconds until fragrant.
- Add butternut squash and stir to coat.
- Pour in vegetable broth and add cumin or nutmeg.
- Bring to a gentle boil, then reduce heat to low.
- Cover and simmer for 25 - 30 minutes, until squash is very tender.
- Remove from heat and blend until smooth using an immersion blender or blender.
- Stir in milk if using and season with salt and black pepper.
- Warm gently and serve.
