- Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper.
- Heat olive oil in a skillet over medium heat. Sauté onion for 3-4 minutes until soft.
- Add spinach and cook just until wilted. Remove from heat and let cool slightly.
- Stir in feta and black pepper.
- Cut puff pastry into squares. Spoon filling onto each square.
- Fold into triangles or rectangles and seal edges with a fork.
- Brush tops with beaten egg and sprinkle with sesame seeds if using.
- Bake for 22-25 minutes, until puffed and golden. Serve warm.
