- In a bowl, combine grated beets, quinoa, mashed chickpeas, breadcrumbs, garlic, salt, and pepper.
- Mix until the mixture holds together, then form into 4 patties.
- Heat olive oil in a skillet over medium heat.
- Cook patties for 4-5 minutes per side until lightly crisped and heated through.
- In a separate bowl, mix quinoa salad ingredients until combined.
- Top each beet burger with a generous spoon of quinoa salad and serve warm.
