- Preheat oven to 375°F (190°C). Lightly oil a baking dish.
- In a bowl, mix ricotta, spinach, egg, Parmesan, salt, and pepper.
- Spoon filling into cannelloni tubes.
- Spread a thin layer of tomato sauce in the baking dish.
- Arrange filled cannelloni in a single layer.
- Cover with remaining tomato sauce.
- Sprinkle mozzarella evenly over the top.
- Cover loosely with foil and bake for 30 minutes.
- Remove foil and bake 10-15 minutes more, until bubbly and lightly golden.
- Rest 10 minutes before serving.
