  • 2 cups cherry tomatoes, halved
  • ½ cup chopped basil or parsley
  • 2 tbsp olive oil
  • 1 tbsp vinegar or lemon juice
  • 1 tbsp Pinch of salt & pepper
  • diced cucumber, onion, or mozzarella pieces Optional

  1. Toss all ingredients gently in a bowl.
  2. Let rest for 10 minutes before serving for best flavor.
