Flexi-Taco Night

A colorful, family-friendly favorite with options for everyone.
Why It Works: This dish shows what “balance” looks like – half plant-based, half tradition. Whether you use meat, beans, or both, everyone can enjoy it.

Ingredients
  

  • 1 cup  black beans (cooked or canned)
  • pound ground meat (beef, turkey, or chicken – optional)
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 1 tomato, chopped
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt & pepper to taste
  • Corn or flour tortillas
  • Toppings: lettuce, avocado, salsa, herbs

Method
 

  1. Heat oil in a pan, cook onion and pepper 2–3 minutes.
  2. Add meat (if using) and cook until browned.
  3. Add beans, tomato, and spices; simmer 5 minutes.
  4. Fill tortillas and top with veggies, herbs, and avocado.

Notes

Grow Tip: Use home-grown lettuce, tomatoes, or herbs for color and flavor.
