Ingredients
  

  • 1 cup dry lentils or 2 cans beans (black, kidney, or mixed)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes (or fresh if in season)
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika or cumin
  • Salt & pepper to taste

  1. Heat oil in a pot. Sauté onion and garlic until soft.
  2. Add pepper, tomatoes, spices, and beans/lentils.
  3. Simmer for 15–20 minutes, stirring occasionally.
  4. Serve with rice, bread, or over baked potatoes.
